Salmon with Quinoa

This is the perfect weeknight meal. It is healthy, flavorful and pairs beautifully with an Oregon Pinot Noir.

Air Fryer Salmon with Quinoa

4 salmon steaks (about 5-6 ounces each)
1 cup white quinoa, washed and rinsed
2 cups chicken broth
1 tsp. salt
1 tsp. pepper
Grape tomatoes
Ripe avocado
Paprika

QUINOA: Wash & rinse the quinoa. Bring to boil with chicken broth and salt & pepper. Simmer and cover for 15 minutes or until liquid is absorbed. Fluff with fork before serving.

SALMON: Meanwhile, season salmon with paprika, salt & pepper. Spray bottom of air fryer with non-stick spray. Place salmon skin side down. Cook at 390 degrees for 6-7 minutes in an air fryer.

VEGETABLES: Cut grape (or cherry) tomatoes in half. Slice avocado into thin slices.

ASSEMBLE: Put about 1/2 cup of quinoa in the bottom of a bowl. Top with salmon, tomatoes, and 1/4 of avocado slices for each bowl. Drizzle with premium olive oil and serve immediately.
